Sargol Saffron (all red)

Saffron is the golden stigma of the purple fall crocus and is the world's most expensive spice. The value of this spice is derived from the fact that it is such a labor-intensive crop. Only five to seven pounds of saffron can be produced from each acre of land. The flavor of saffron, however, is very concentrated. One gram of saffron is enough to flavor forty servings of saffron rice or two large batches of paella. Our genuine persian saffron comes in a decorative tin.

Sargol saffron (All red saffron): This kind of saffron is pure and contains the stigma without the style. 105 kg of saffron flowers produces 1kg of sargol saffron.

Water-soluble Saffron is often soaked overnight in water or milk before being added to the recipe. Steep threads for 20 minutes in something acidic such as vinegar or lemon juice, or something alcoholic like wine, in order to extract the full flavor, or finely powder the thread by pounding in a mortar and pestle. 1/2 tsp. of threads makes 1/8 tsp. of powder. 1/2 tsp. of threads is generally enough saffron for most dishes. Saffron is used in all types of foods to add both flavor and a bright yellow color.

The main aroma factor in saffron is safranal, which comprises about 60% of the volatile components of saffron.
In fresh saffron this substance exists as stable picrocrocin but as a result of heat and the passage of time it decomposes releasing the volatile aldehyde saffranal.

Where to Buy Saffron
Most specialty food shops carry saffron, though if it has sat on the shelves for too long it may have lost flavor, so look for bright color. There are a number of places to purchase online, though we recommend purchasing through one of the reputable dealers associated with Amazon and their trusted and secure online ordering. Preparation and Storage
Because of its expense, intense flavour, and strong dying properties, very little saffron is required for culinary purposes and the key is to distribute it evenly throughout the dish being prepared. It can be crushed to a fine powder in a mortar and pestle. It is easier however, to steep the saffron in hot water— a pinch to a cup will create the desired flavour and colour. Good saffron should expand on contact with the water and a cup should be sufficient for 0.5 kg (1 lb) of rice. Powdered saffron is added directly to the required ingredients of a dish, though we recommend against buying saffron powdered, as it is so frequently adulterated. Store in a cool dry place, out of the light.

SAFFRON SAFFRON KESSAR AZAFRAN SAFRAN

Just a few threads of saffron are enough to give an enhancing color and special touch of flavor to rice, soups, stews, sauces, sweets and bakery.

Usage: Dissolve saffron, for about 20 minutes, in something hot, something acidic or something alcoholic, depending on the ingredients of the recipe. To extract all the aroma, flavor and color rub the saffron with a spoon. Typical usage 4 to 6 filaments per person.
Saffron is the stigma of the fall flowering crocus. Peek inside most any flower, and you will see three threadlike filaments. These are stigma - but only in the saffron crocus are these stigma worth thousands of dollars per pound. Saffron is so valuable because it is a very labor intensive crop, and only 5-7 pounds of saffron can be produced from each acre of land. This makes saffron the most expensive spice by weight - it always has been - but by use saffron isn't that expensive, because a little goes a long way. A single gram of saffron easily translates into golden color and fragrant flavor in 10 recipes of saffron rice for four, several batches of bread, or a couple of big pots of paella.

At irandriedfruit, we sell three different grades of Saffron:
Kashmir "Mogra Cream" Indian Saffron is the world's finest saffron. The dark red color and long perfect strands are as beautiful as they are colorful and flavorful. Kashmir saffron is awfully tough to obtain, which makes it higher in price, but Kashmir Mogra Cream Saffron is truly wonderful.
Spanish Coupé Saffron is the top grade of the Spanish Saffron crop. Extra hand labor is used to remove every bit of the yellow saffron style material, leaving 100% beautiful pure red saffron threads -hence the name: coupé means "to cut", as in cutting off all the yellow bits. Spanish Coupé Saffron is a truly excellent crop, especially nice for the traditional Spanish dishes.
Spanish Superior Saffron is the most widely available saffron and is a very good crop. Spanish Superior Saffron has a bit of the yellow style material left attached to some of the saffron stigmas (see photo), so it is not quite as strong as Spanish Coupé or Kashmir Indian Saffron.

Pure Spanish Saffron in Threads - Besides the paella pan and the rice, there is only one other required ingredient for authentic paella: saffron. We sell saffron in threads rather than in powder form because it is difficult, if not impossible, to assess the quality of saffron powder. (Powder may have been blended with inferior quality saffron or adulterated with non-saffron products.) Saffron in threads stays potent for up to three years when stored in a cool, dark, dry place.

Why is genuine "Mancha" Spanish saffron so precious? The saffron flower must be hand picked at dawn on any of the 15 to 20 days in which it is in bloom mostly during end-October. The flowers are collected in baskets, and transported to the villages where the precious stigmas are removed by hand. To give an idea of the laborious nature of this work we can say that from 160,000 saffron flowers, approximately, 5.25 Kg of stigmas are obtained which, once dried, produce only 1 Kg. of saffron. Due to it's properties, "Mancha" saffron is beneficial to health, and used in many recipes. Spanish "Mancha" saffron is the best in the world, owing to higher levels of aromatic & flavouring oils. Spanish saffron’s red-filament are the longest. The charecteristics of genuine Spanish Mancha saffron is that the stigma's must be joint in the three's at the end of a portion of the style, which is yellow in colour. The stigma's must be longer than the styles and their colour vibrant - red, never dark red.

Spanish saffron is the most famous saffron, noted for its intense flavor, yet lack of bitterness. Use Spanish saffron as the perfect choice for paella and fish.Saffron is the world's most expensive spice. Saffron is collected by carefully hand-picking the yellow-orange stigmas from a small purple crocus (Crocus sativus).
