Smoky Almonds Recipe:
2 1/2 Cups raw almonds
1/2 tsp. hickory smoked salt
2 Tbsp. tamari or soy sauce
1/2 tsp. brown sugar or honey
Preheat oven to 300 degrees F. Toast almonds on a large baking sheet for about 25 minutes.
Stir salt and sweetener into liquid (either tamari or soy sauce) until dissolved. Toss almonds with mixture in a large bowl.
Let almonds soak for 2 or 3 minutes. Return almonds to baking sheet and crisp in oven for 5 minutes.

- Mix well so all almonds are evenly covered.
Step 2: Roast
- Spread almonds in a single layer on a baking tray.
- Roast for 12–18 minutes.
- Stir every 5 minutes to prevent burning.
- Remove when almonds become fragrant and slightly darker.
Step 3: Cool and Store
- Allow almonds to cool completely.
- Store in an airtight container.
Method 2: Natural Smoked Almonds
For a stronger smoky flavor:
- Roast almonds lightly first.
- Place them in a smoker at 80–100°C.
- Smoke for 30–60 minutes using:
- Apple wood (mild, sweet)
- Hickory (strong smoky flavor)
